I’m new to Sharetribe and enjoying it so far
I do however wish to remove the Pickup option as a choice for Shipping.
Any tips on how this can be completed?

Indeed right now there is no such feature out of the box, so that will require some custom development.
Just to be sure, are you already using the Community edition on your own servers? Or are you planning to build your marketplace using the hosted version (hosted at .sharetribe.com)?
